In August we were once again on a small road trip with our VW bus. This time we went to Holland, where I had a portion of fries with delicious Joppie sauce as usual. So back in Germany I didn’t want to just try to make my own french fries sauce. Of course, I also needed the matching fries to have something to dip.
As a friend of the homemade, only my own, homemade fries from the oven came into question for me. In the past, potato wedges, or Potatoe Wedges, were often a bit soft and flabby. After a few tries, I have now found out how to get the homemade fries nice and crispy.
Delicious fries with Joppie sauce
Ingredients for 2 portions of Fries
- 6-8 waxy potatoes
- ½ tablespoons cornstarch
- ½ tablespoons of flour
- 2-3 tsp paprika powder
- 2 teaspoons fried potato spice*

Preparation of the homemade fries
1.Wash the potatoes and first cut them into pins of about the same size You can leave the skin on, but you should remove any discolored areas. Depending on the size, you can cut a potato into about 4-8 slices.
Potato wedges with flour and spices
2.Mix the potato wedges in a large bowl with the remaining ingredients and leave them to stand for a short time. In the meantime, you can preheat the oven to 200°C circulating air.
Bake the fries in the oven
3.Spread the potato wedges on a baking tray lined with baking paper and bake in the oven for about 20 minutes. Turn them over in between so that they get brown on all sides. Season the fries at the end and your crispy homemade fries are ready.

Making tasty chips or potato wedges yourself is really easy. The flour and starch that bind the liquid that comes out makes the potatoes nice and crispy and with a few tasty spices, you can make your own individual fries. So you can do it without the finished product.
